Chilaquiles

Breakfast of champions isn't beer and cold pizza any more, it's beer and chilaquiles.
There appears to be more  recipes for the dish than grains of sand on the beach, looks like I've got a lot of eating to do.
If there is such a thing as a "regular" day when you're on holiday, then this was one of them. A stroll around the town for this late breakfast, a beer here, a beer there, and then back to the pool to take in some rays.
Sadly, our last full day.
