Cold Weather Food

It's rained most of the day and blown a rather strong wind. Just before sunset the sky brightened sun shone yet no heat .Birds came to the cafe and all had a supper . Then I decided to cook .It's my favourite pasta dish with a very strong cheese .Vegan and although purists may say it isn't cheese you have my word  it tastes terrific..Pasta , onions , garlic and tomatoes . plus grated cheese .Create layers ending with cheese and cook for 30 mins at 190°c. .Finish under the grill .Serve with a side salad or on it's own .This was just out of the oven . Tomorrow 's lunch is sorted .Perfect comfort food
