Carrot Cake

This was only half of the amount of carrots I had to grate to make the carrot cake on behalf of my mam today. The recipe said that the total preparation time was 40 minutes and the total cooking time was 1 hour 10 minutes. I spent about 40 minutes alone grating the carrots, and another 2 hours and 15 minutes for it to finish cooking. Either I was very slow making it or the recipe was very optimistic!
