Blackcurrant Jam...!!
All labeled now and ready for my larder outside in the utility room...made yesterday from berries I’d kept in the freezer from last year.....they were perfect and brought back the wonderful scent of high Summer for a couple of hours to the kitchen while it was cooking and cooling..!
The extra is the ‘cooking bible ‘ I use for all my jam making and pickling....Darina Allen is another one of my Irish cooking Heroes.....she has done so much to promote Irish produce both here at home and abroad..
She lives and works in a beautiful corner of Ireland ...down in Ballycotton in Co. Cork....at Ballymaloe House...you may have heard of it..?? It’s cookery school is world famous..
I have had the pleasure of meeting her a couple of times too...she is a tiny person with huge charismatic presence...!!
She also champions ‘The Slow Food ‘ movement which promotes using only locally produced and sourced produce in season.....the way we should all be eating really...!!
If you want a true Irish cook book you can’t go wrong with one from Darina & Ballymaloe...!
