Roasting tin ratatouille

I assured Abi that once Dan had taken himself off to uni there would be more home-cooked, vegetarian meals, and this evening I made good on that promise.

To be honest, it was a little bland (lacking depth in that way that vegetarian food can), but with some crusty bread and butter, it was actually rather enjoyable.
