Pan de Sal
There are certain things that trigger our memories and remind us of how things used to be and one of them is the aroma of pan de sal dough being proofed for the night . There aren't many of these tiny bakeries any longer were a simple mixture of salt, flour and water is still kneaded by hand. Tomorrow, before the crack of dawn, these puffy pieces of bread will be baked and be ready to early risers who want their bread straight out of the ovens .
