Burger
Wagyu cheddar cheeseburger with arugula, sweet onion, and ketchup on a sourdough bun served with air fried fries and a pickle.
This is the most "from scratch" burger dinner I've ever done. The fries started as russet potatoes, and the pickle is homemade (loctofermented). I made the buns myself, and they were quite good (the last time I tried making my own hamburger buns they were too small). For the cheese, I melted some cheddar with sodium citrate in a small amount of milk, then I let it chill in a flat sheet. This produces cheese slices that melt like American cheese, but which actually taste like proper cheese. This, minus the chilling, is how I usually make sauce for macaroni and cheese (the technique comes from Modernist Cuisine at Home). I can't take any credit for the ketchup (Heinz Organic) or for grinding the meat... maybe next time.
