Basque Chicken

Apologies for the photograph of the chicken prior to its cooking but wine took over and I forgot to take a picture of it cooked! Before I turned round it was gone! I also forgot to take pics of the cheesecake and the soufflé! PAH!

Basque Chicken - I would brown chicken more thoroughly next time as I took the lid off in the oven and it did dry out the rice a little too much - nothing serious but I coud tell.
