Earlier in the week, the weather forecast for this weekend was rain Saturday and Sunday so I was very happy to wake up to sunshine, and even happier when it stayed.

Peter arrived in time for lunch, which we were able to eat in the garden. We worked out the last time he was here was January 2020 - eighteen months ago!  Unbelievable!  I sincerely hope it won't be that length of time again.

After lunch we moved to the back garden and spent a lovely afternoon catching up.  It's so lovely to be able to spend all day in the garden.  Once again Lola was Peter's best pal :-)

Since the Korean beef and Korean green salad was such a hit with LeeAnne and Gail, I made it again for this evening's dinner and Peter also gave it his seal of approval.  Again we ate outside, which was lovely, apart from being harassed by a wasp!  Hate them!  Thankfully it eventually left us alone.

Came inside for dessert.  Made healthy ice cream (nice cream :-) in the Vitamix using frozen strawberries, raspberries, blackberries and some Greek yogurt.  The Vitmix makes such a racket (it has a very powerful motor that's needed to mush the frozen fruit) but the end result is well worth it.  Healthy ice cream, ready in minutes.  Delicious.  I can see me making a lot of it in the coming weeks.
