Sweet Pimento Pepper
With many uses in the culinary field, these peppers (yellow, red, green and a mix of the lot) provide a lovely taste to many dishes.
Well known in the raw form, they are used in salads, or as crudites.
They also make a lovely stir fry with any combination of vegetables.
Browned together with chopped onions, they form a tasty base for stews and meats.
When I have too many to use at once, I chop the peppers into 2cm square sizes and keep it in the freezer until needed.
These frozen ones will now only be used in stews and cooked dishes.
Easy to make an impromptu spicy rice dish:
Brown chopped onion and chopped pepper
Add the desired amount of uncooked rice
Add 1 medium finely chopped tomato
Add enough water to cook rice and pepper mix
Add Spice for Rice to flavour.
Cook as usual until done.
And then they are photogenic as well!
