Jack -go-to-bed-at -noon
Yesterday, when we were working on our local wildlife area, I spotted some plants in our wildflower meadow, whose flowerbuds remained resolutely closed. Today, I returned earlier, and with a bit of sunshine they were beginning to stir, confirming they were Tragopogon pratensis, Goatsbeard, orJack -go -to- bed- at -noon. Yesterday, Jack was having a duvet day!
It's closely related to the purple flowered Salsify, T. porrifolius, which I have in my garden. Salsify/Oyster plant and Salsify
You can eat the roots of both, plants, but I haven't tried them yet.
