EVER GET THIS CLOSE TO A LOWLY DANDELION?
Taraxacum officinale.....beautiful blossom. They get a bad rap by many people but you have to admire their resilience and ability to invade almost any niche. And they're edible.....roasted dandelion blossoms are tasty and the leaves, early in Spring, make a nice addition to any salad. Later on they become a tad bitter.
Dandelion fritters is another way to enjoy the blossoms. Here's Martha Stewart's recipe:
