This is one of my favourite Mollie Katzen recipes, for a potato pie crust - you can add lots of different fillings as for a quiche and you can also make it with 50/50 potato and sweet potato. Today I made the filling with fresh tomatoes and pesto and added some just-picked herbs from my thankfully sunny garden.
