Spaghetti carbonara
The Saturday Kitchen episode on BBC 1 TV featured the Italian chef Danilo Cortellini, until recently head chef at the Italian Embassy in London.
He prepared what he called "foolproof" Spaghetti carbonara.
It reminded me of the first time I went to Italy and discovered the dish as I did not like cooked tomato in a dish. I have mellowed in my taste for cooked tomato in all its forms, passata, concentrated paste, etc and cook with tomatoes quite happily. Perhaps not happy but more accepting.
I was tempted to make it for lunch and here it is. The wine expert, Helen McGinn, paired it with an Italian white wine, Pecorino, but I thought a more robust red would be better (Not just because the wine cellar was out of Pecorino)
