Lemons
We've been trying out some recipes from the Ottolenghi book I was given for my birthday - delicious so far. I'm also watching his TV programmes where he visits different countries in the Middle East. One of the ingredients that comes up all the time is preserved lemons which are used a lot in middle eastern cooking so today I've had a go at making my own. They sit in the jar for at least four weeks after which you add some spices and oil then they are ready to use in recipes.
