Green papaya pickles. A friend has a bumper crop of papayas. (In amounts of fruit per plant, papayas are the arboreal equivalent of zucchini - and the neighbors tire of them just as quickly.) Other friends - Deborah and Rod Abanto who work with me are Fillipino-Americans. Deborah's grandmother made wonderful dishes out of green papayas including these pickles. Shredded green papaya, white raisins, carrots, hot peppers, fresh ginger, vinegar, salt, whole peppercorns and a bit of sugar. Ate 1/3 of a jar in the car on the way home. Great on fish, chicken, pork, turkey sausage... or forkfuls out of the jar. Also wonderful licked off the steering wheel (only at red lights, please.)
