Eggplant

It's been salted, sweated and wiped down. That first step for eggplant parmesan takes a good 40 minutes. The entire dish from start to finish takes me 4 hours including clean up. I now have several pieces frozen individually and that makes me happy.

I used to make my own sauce the day before...I get it at the farmers market now :-)
