An Arbroath Smokie

Scottish haddock from the North Sea are wood-smoked in whisky barrels. They are from small family smokehouses within a 5 mile radius of the east coast fishing town of Arbroath. The outside of the fish has a coppery brown colour and the flesh is creamy with a lovely sweetness.
