Big, flowered stalk!

This plant is similar to a century plant but their big stalks that shoot out of the center look like Asparagus on steroids.  I'm not sure what this is.  This yard had another one about 3 years ago and I watched it for weeks and weeks.  The plant life in Arizona is fascinating to me!
