Slow-cooked lamb with figs an pistachios

This recipe was in last weeks Guardian Feast magazine. Created by Yotam Ottolenghi, an Israeli chef. Absolutely beautiful. I will admit some trepidation when looking at the ingredients but, boy they work so well.
