Potjiekos
Potjiekos is a South African version of stew. We cook it in a cast iron cauldron over coal or gas at a low heat for about four hours and we layer the ingredients (as opposed to mixing it all like in a stew) so each ingredient tastes like itself. It sounds strange but it's delicious. Today's meat was lamb shoulder.
