Ginger cupcakes with lemon icing

These are Jo's favourite, so made some for her as a belated bday offering as we couldn't make it last weekend. She's starting a new job tomorrow - leading courses for ex- service men and women who now find themselves in need of a job and help to settle into life in civvy street. Considering the news of more cuts on the way, she's going to be very busy in the coming months. Which means I'm going to be busy walking Fossey, hurray!
