Vegan frittata

A new recipe. Vegan frittata. Came across it by chance, and as I had most of the ingredients, thought I’d have a go. Luckily dear ‘E’ upstairs was able to get me some cavolo nero for it.

First a walk down to the Lower gardens and back. Then tea at home. Then made the frittata. And red cabbage, a special request from ‘E’. He always raves about it. He had some frittata too.

Now relaxing after a fine dinner, the frittata was delish. Didn’t expect it to turn out so well. Now watching portrait artist of the year, semi-finals. So much talent.
