hot soup

my favourite tinned soup is cream of tomato - during lockdown i have run out - and found that i can make a better one from scratch.  today i added Amarillo Hot Sauce and left over mashed potatoes to thicken.

3 large plum tomatoes, skinned & seeded & roughly chopped
1 small shallot, chopped
a small number of celery leaves
1 tablespoon crème fraîche
a generous tablespoon of left over mash
hot water & a teaspoon of chicken stock powder
a dash of Amarillo Hot Sauce
black pepper

sauté the shallot, add the tomato and celery leaves
then add the rest until you have a consistency you like
allow to cool down a bit and then blitz in a blender until smooth.
