Veritably vegan
Still trying to eat sensibly and still 10lb off my peak 3 months ago. The spread above looks indulgent, the scales will tell.
After last night’s success with the vegan muffins (top and bottom centre), I was inspired to try an air-fried mini chocolate cake. I used the 100% Chocolate powder I had, instead of cocoa powder. A quick whisk, into 2 glass dishes, and 10mns in the air-fryer. Et voilà - see the blip. Not at all bad.
For lunch, I made a beetroot/gherkin/caper salad, served with slivers of my cashew truffle sheese and the coleslaw from a couple of days ago, and a sliced Marmonde tomato.
Dinner, a heated up muffin, on a bed of potato/celeriac mash, with cavolo nero.
So it’s been a foodie day. No complaints.
