A twist on a carrot cake, I made this Persian Carrot and Coconut cake yesterday, with loads of grind nuts and no flour, and left relaxing overnight.
This morning I whipped the cream with home made rose water to serve it with a slice of this very moist but slightly tad dense cake.
My husband loves carrot cake so its a winner for me :)
