Tofu, pepper, leek and kale mix
This is my own mix of pan fried vegetables with firm tofu and a tin of tomatores added. It simmers away gently with the lid on absorbing all the flavours. Sometimes I serve with courgette spaghetti. Portions freeze well. You can also see on the right a bottle of Supernature cold-pressed rapeseed oil infused with lemon. I buy direct in bulk from a Midlothian organic farm where the rapeseed grows. Their oils are great for stir-frying, roasting, baking, on salads or simply to enjoy dipping with bread. I picked up the blue Dutch tile stand years ago on holiday and love the colour in my kitchen.
