Today I decided to make pork scratchings. After watching several YouTube videos and reading recipes, I chose the method I thought would be best. It is a long, drawn out process that still hasn't been completed, but the first step is to remove as much fat as possible from the rind. While I've got all the time in the world, I decided to render the fat. I'm quite pleased with the outcome and can't wait to fry something in it.
