Enchiladas

Some fresh chopped red pepper to start the recipe.  Homemade enchiladas are in the works.  The smells are intoxicating.  I worked up a good appetite walking in the freezing cold at the park.  
I had on multiple layers of clothes and was really okay except for my fingers which could have used mittens instead of gloves I think.  Anyway I liked the way these chopped peppers looked so vibrant against the black pan and decided it would make a good blip.  Snow is in the forecast this week...wahoo!
