Blue sky

It’s a sunny day today. The sky is the lovely colour of winter blue. I think the shade is slightly different from hot weather blue sky. I’m sure you’ll tell me if that’s just my imagination :-) 
We’ve cleaned all the downstairs light fittings which wasn’t that much fun but kept us off the streets. We did venture out to buy some led light bulbs to replace those spiral shaped low energy ones.
As a couple of people asked for the digestive biscuit recipe, so here it is.
Ingredients 

175g plain flour
150g oatmeal or porridge oats *
150g margarine or butter
1/2 tsp bicarbonate of soda
1/2 tsp baking powder 
pinch of salt
3 tbsp of honey + 2 tbsp milk

* I used porridge oats but I gave them a spin in the blender first to break them up .

Method
Grease or line 2 baking sheets
1. Sieve the dry ingredients into a large bowl and add the cubed butter or margarine. Rub in until it looks like breadcrumbs.
2. Add the honey and milk and bring into a ball of dough using your hands.
3. Flatten the dough into a disc and cover with cling film. Chill in the fridge for 30 mins.
4. Preheat the oven to to 170 deg C fan or gas mark4 . 
5. Remove dough from fridge and roll out to 3 to 4 cm thick. 
6. Cut out biscuits with a 6cm round cutter and place on the baking trays., Make a pattern on them with a fork if you wish. 
7. Bake for 12 to 15 mins until lightly browned. Switch off the oven and leave for 5 mins or so.
8. Remove from oven and leave to cool for a few mins, then transfer to a wire rack. 
Store in an airtight container,
