Smoked paprika and mango chicken
Every year a friend in South Africa sends us a calendar
Last year the months were illustrated with scenes from Port Elizabeth, the city where I was born.
This year, the months show a tempting looking dish, complete with recipe.
I am going to attempt to make each one throughout the year, and photograph the result
.
There are two issues to face; the ingredients which may be uniquely South African plus the seasons are upside down so you can look forward to ice cream in winter, which is summer in the Southern Hemisphere.
Today we start with a smoked paprika and mango chicken. The ingredients were not too difficult to obtain but the instructions state the chicken should be cooked on the barbecue.
In this weather? No!
More challenges lie ahead.
