A very foggy day
Gavin and I planned a different walk today as we are getting so bored with walking in the same place every day. It is not very far from our house but it is higher up and quite exposed, and we were surprised to see a thick fog when we got there, with remnants of snow lying around - I never knew it had snowed anywhere around here. And there was frost! The walk was about 5 miles (8km) and quite treacherous in parts due to a thick squelching mud - I lost my sense of humour when the mud was halfway up my wellies and promised myself that my first holiday after we can travel safely travel again one day will be to somewhere mud free! I have never seen such muddy conditions - quite a few times we had groups of cyclists coming past us - firstly they missed the memo about being allowed to exercise outdoors with only one other person, and secondly they are the reason the walking path is so churned up. It is annoying that walkers and cyclists so often have to share the same countryside paths. The walk took about 2 hours as it was up and down so by the time we finished I was very overdue my morning coffee! I have added some extras.
I am so enjoying this recipe book. Luke told me about it and it is my current favourite book as the dishes are all interesting and very flavoursome, using my favourite ingredients, and it suits my lazy easy style of cooking - throw everything in a roasting pan and relax while it cooks. For the past few nights I have been trying a recipe from this book, and each one has been delicious and a success. Tonight it is prawns on baked polenta with roasted tomatoes and leeks - it’s a version of the American dish shrimp and grits
Things are really bad at the moment with the rise in Covid cases and the hospitals being under pressure - thankfully we have three different approved vaccines now so hopefully the vaccination program gets done as quickly as possible. Stay safe but do get out once a day for some exercise to stop yourself going stir crazy!
