A T for T

T has been working killer hours for months trying to finalize fund deals vital to the future of her company.

Although today is her birthday she was at work again just after 4am but asked us to pop round for a quick lunch and some bubbles.

Her favorite cake is vanilla with cream cheese and granadilla frosting , but not having planned our wee lunchtime gathering it’s not something you can just pick up shop made without ordering.

What to do? Marki suggested we just pick up some mini Swiss rolls that she is also fond of, and this was the outcome.

Swiss roll base and a quick mascarpone frosting with a granadilla glaze. By far the easiest cake I have ever flung together and it tasted pretty good too.

She is absolutely exhausted and no reprieve is yet in sight, but she is still smiling a we all enjoyed a bit of birthday fun. It was great to be together, even just for a couple of hours.
