Have just made two dozen of these mini St Clements muffins, the first time I’ve tried this Mary Berry recipe. Part of the attraction for me was the incorporation of a ‘finely chopped’ thin-skinned orange. The whole thing!

It was quite a large orange and really juicy, so I am excited and apprehensive in equal amounts as to how they’ll turn out. They take just 15 minutes in the oven so I’m writing this blip as I wait. Once out they are to be dusted with icing sugar and eaten while warm.

Postscript The muffins are quite nice, but the orange peel makes them a tad too bitter for me; I don’t even like marmalade! They will definitely all get eaten, though. I have frozen a dozen to inflict on the girls when they’re home for Christmas. They’re pleasant enough with a cup of tea. :)
