Creole Christmas cake

Having left the the fruit, alcohol and spices marinating in a jar in the fridge for nearly a week, today I mixed and baked my second fruit cake. We both love fruit cake and usually I make one big cake for Christmas but this year I decided to bake two smaller ones using completely different recipes so that we can compare them and see which we like best.
