A good use of puff pastry which should always be in every household fridge for a quick dinner.
I used roasted beets (cooked the other day), brie and sun-dried tomatoes on puff pastry firstly brushed with sun-dried tomato paste.
Once pastry cooked - garnished with Rocket salad, pomegranate and passion fruit seeds, yummy :)
