Day 3

Oat Apple Muffins

1 cup of oats soaked for 20mins in 1 cup of coconut milk/drink

1.5 cups of almond flour
pinch of salt
1 tsp baking powder
.5tsp bicarbonate of soda

Mix dry ingredients

Separate bowl mix:
.5 cup honey
.4 cup olive oil
1 egg

Mix wet ingredients into dry ones. Add oat mixture. Add one chopped apple. Put in muffin cases and sprinkle each with flax seed.

Bake for about 30-35mins at 180 degrees.

About 300 kcals per muffin (made 9).

Dinner:

Turmeric and coriander minced beef koftas. Added black pepper to activate turmeric.

Made apple sauce by blitzing one apple and peeling and finely chopping another.

Served in a tortilla wrap with cucumber side.
