Pearled Spelt Risotto Mark II
Continuing with the efforts to expand my repertoire of meals; this was my second attempt at pearled spelt risotto, with mushrooms and broccoli. A good comfort food for mid-week.
My first attempt was OK, but this was altogether more moorish. Partly due to making a better job of cooking the broccoli this time; but mainly because I add the chorizo left over from an earlier recipe! (Had to be done!)
Last meal before the start of the second lockdown, so we did give in to a bottle of 'Wednesday Wine".
