Lemon Ridiculous.

Today I felt like another tart. This time I decided to tackle the lemon curd in a Lemon Tart. Well, this tart turned out SPECTACULAR!! I will be making this one again for sure. I did cheat in the sense that I did not make the base. For this I bought some vanilla bean sweet shortcrust pastry. I do think it is hard to get the lemon curd right but this one was absolutely spot on I don't mind saying ;O)
My daughter gave her verdict after tasting and she said it is "Ridiculous!" (that means good)

So I have named it, "Lemon Ridiculous"
