Nearly Burned Apple Sponge (Eve's Pudding)

A couple of days ago I posted about my big cooking day. It had gone well.

Today I baked another cake to use up the cooking apples given to us by my old handball pal.

This time I put the cake in and went of a Bellfield zoom call (Ops meeting) - at least 2 x 40mins. When it finished my daughter walked in the room and said 'is something cooking?'.

I kept up, saying 'the cake!' Andean to the kitchen. It was okay, some how. I took this snap to laugh at myself but I liked the light in it. Glowing jewel of salvaged cake.
