Einkorn Flour

Another visit to the osteopath this afternoon. My back is making good progress but he found that the pains in my right ankle are caused by tension in my shin, which is also effecting my knee. Still feels like I am moving in the right direction with his help.
I have discovered Einkorn flour during lockdown, thanks to Side Oven Bakery. Today's loaf has risen more than the others, which have tended to be very dense. Not as nutty and rich and as wholemeal but a tasty, smooth loaf. Hope this tastes as good as it looks.
Some showers this afternoon but sunny periods and little wind (for a change.)
