5 Jars of Pumpkin Marmalade
Yes, you read the title right. Pumpkin marmalade. Jolly good it is too. Was given a book Preserves Receipes for Christmas and this was the first one from the book. Had a pumpkin left over from Halloween and hadn't found a use for it.
Mind you, as usual, had to adapt receipe. 30 mins boiling then add sugar and 30 minutes more boiling until a wooden spoon could be drawn across the mixture. 2 hours later, still waiting. Gave up and put it in jars.
Receipe said it could also be used a pie filling - so tried it with pancakes and it went well.
