Loved and lived in.......or ruined?

I know if you get butcher block tops in your new kitchen they will get marked, but I also know that you need to wipe up spills - particularly fat - immediately. This is what happens to your three month old work tops if you leave fat spills over night. I am trying to learn to love it and live with it - but I'm having to try very hard!
