I made organic/vegan carrot-leek soup with fresh thyme. Its delicious and I have not made it in ages. What you see is going in my freezer. I have 2 servings in my fridge!. The extra you can see it right before I stirred the leek mixture in. I also did not have enough veggie stock so I used some of my lemongrass stock...yum!
