Low white carbohydrate, vegetable loaded meals

Now completely self sufficient in terms of the vegetable components of my evening meals. The allotments have gone into overdrive and it’s impossible to consume or sometimes give away to neighbours and friends all that is produced.
My meals are low white carbohydrate, vegetable loaded and it’s easy to satisfy the requirement of 750g per meal from the allotments. Presently my favourite vegetable is spiralised courgettes followed closely by beet, beans (broad, French and runner) and pod peas.
The allotments are also producing an excess of soft fruit at the moment and my main meal is followed by a “sweet comprising of 250g mixed berries (strawberries, gooseberries, red&black currants) topped with 75g of oatbran and 100ml of Greek yogurt.
