According to the sound engineer where I was shooting a mini concert, this unit is called a "soundboard." This being a 16 channel sound board.

I'm glad I'm just a lowly photographer... this thing has WAY too many buttons, knobs, and sliders for my liking, although it looks like it might be fun to play with :)

I'll leave that part to the pros.
