radish, pickled cucumber, & lobster salad
i learned how to deal with a lobster at a very young age. these ones would have been caught by Jim Miller, father of Joe and grandfather to Levi who now provide us with wonderful seafood during lockdown.
this will do me for Lunch & Supper
1 lobster, picked
half a cucumber, peeled into strips, seeds discarded & steeped in pickling vinegar, chilli flakes & a half teaspoon of sugar
10 radishes, sliced
mayo for the lobster
2 scant tablespoons of Helman's
a bit of cream
a bit of olive oil
zest of 1 lemon
4 small cloves of smoked garlic, crushed
a small bunch of thyme, chopped
some cayenne pepper to taste
salt & freshly ground black pepper
fold the mayonnaise into the lobster meat
and put it at the bottom of the bowl
arrange the pickled cucumber around the lobster
tuck the radish slices all round the edges
& on the top with a bit of parsley and chive flower
