another lunch
Crab with Mint, Mango & Cucumber (for 1)
white crab meat
half a mango, peeled and diced
2 inches of cucumber, seeded and finely sliced
4/5 sprigs of fresh mint, leaves picked from the stem
1 spring onion, finely sliced
half a red chilli, deseeded and finely chopped
(a whole one if you like it hotter)
dress with a bit of olive oil, zest & juice of a lime
a drop of thick soy (Pearl River Ridge) really, just a drop
a pinch of salt
a quarter teaspoon of sugar
mix it all up
it’s light & fresh, but very filling
and delicious.
