Leek omelette

Another simple but delicious supper...

The best omelette I have ever eaten was in 1980 in a restaurant in Aix en Provence. It was 11:00pm and I had just driven down from Paris, arriving so late that all the restaurants had stopped serving food. A cook, standing outside his restaurant soaking up the atmosphere of the balmy July night, took pity on me and cooked me the most delicious omelette a la ciboulette.
