Layering the Meat
Preparing either beef or pork in this manner and then rotating it next to a flame is called al pastor I had never seen anyone actually putting the meat on the skewer, and the young man (and the other guys working there) thought it was quite funny when I asked if I could take his picture! I said, "you are famous," and he really laughed!
You may have seen meat fixed like this in a Turkish or other Middle-eastern restaurant, though it was probably lamb. Here you buy tacos al pastor.
